Happy Foodie Friday folks!  Summertime means one thing across America (and Canada too!) and that is barbecue season!  One of my favorite ways to spend a Saturday is lounging in the sun in my backyard with something sizzling on the grill – all the better when the recipe come from WDW!  Today, we’re going to talk about the ultimate in Animal Kingdom barbecue…

Flame Tree BBQ Rub and Sauce

If you’ve never dined at the lunchtime (they serve dinner too!) hotspot on Discovery Island, you’re missing out.  Flame Tree BBQ offers some of the freshest, tastiest counter service items in all of WDW.  You can get a variety of hot an cold smoked and barbequed dishes, but they are most famous for their chicken and ribs – sold individually or together in a combo platter.

The chicken and ribs at Flame Tree BBQ are made with a proprietary recipe that’s not used at any of the other restaurants at WDW, which makes these items unique.  Even though similar dishes are available elsewhere, I always head straight to Flame Tree BBQ for my fix!

It all starts with a delicious rub that’s applied to the meat, before it’s smoked and then grilled to perfection.  Then you get to apply your own barbecue sauce so you can be sure it’s served up just the way you like!  This is one meal I NEVER miss when visiting WDW – I’ve even been known to have Flame Tree BBQ twice on the same trip!

In addition to the super tasty food, there is ample seating in the shade by the water, overlooking Expedition Everest, and it’s central location in the park makes this the perfect pit stop when you need to refuel and refresh.  It’s particularly rewarding when used to cheer up cranky kinds (or husbands) so you can make the most of your day.

Ingredients – Rub

  • 2lbs white sugar
  • 8oz seasoning salt
  • 2oz each of paprika, chili powder and fine ground black pepper
  • 1oz ground cumin
  • 1/2oz each of garlic powder and onion powder

 Instructions – Rub

Mix all ingredients in a bowl.

Sprinkle generously on meat and massage in before smoking or grilling (I‘ve made this in a friends’ smoker, but going straight to the grill is good in a pinch!) – any cut of chicken, ribs, turkey, or pork work well, and if you have a rotisserie spit, now’s the time to use it!

Keep any unused rub in an airtight container for use all season long!

Ingredients – Sauce

  • 58oz ketchup
  • 16oz water
  • 7oz rice wine vinegar
  • 4oz molasses
  • 2 tbsp each chili powder, paprika, turmeric, ground cumin, brown sugar, onion powder and garlic salt
  • 1/2 tbsp ground cloves

Instructions – Sauce

Combine all ingredients in a saucepan on medium low heat and simmer for 30 mins.

Cool and serve with barbeque meat.  Store any unused portions in an airtight container in the fridge for up to 2 weeks.  This sauce is pretty great on burgers, hotdogs, cornbread, and as a dip for chicken strips too, so go nuts!
